Lemon Curd

2012 has well & truly started. I have defiantly refused to make any resolutions but thought up a list of 'wishful intentions' to go in my side bar instead.

The best thing about making lists is crossing things off the list...I've often intended to make Lemon Curd but never quite got round to it. Having added it to the list, I immediately set about making it!

Lemon Curd is a favourite of mine, especially when it's very sharp & extra lemony. The only way to achieve this is to make it myself...


I followed a Nigel Slater recipe.

The other lemon rolled out of shot...

I put the juice & rind of 4 lemons, 100g unsalted butter & 200g sugar in to a bowl over a pan of simmering water. (I only had 175g of sugar so did without the remaining 25g)

Don't forget to add the juice...

I stirred until all the butter had melted & then added a beaten egg mix (3 eggs & the yolk of another egg) to the bowl.


I continued my stirring until the mixture had thickened to a custard consistency (Nigel claimed it would only be 10 mins, my lemon curd took 20 mins...)


Then I let it cool for a mins before transferring to sterilised jars.

The total cost was £1 per jar

I will eat it on the crust of newly baked bread or warm crumpets or stirred in with yoghurt or just straight from the jar...

It was very easy & as well as tasting delicious it also filled the house with a wonderful aroma. Next time I might experiment with oranges or limes instead...

As I put a jar of lemon curd in my trolley during my mad dash around Waitrose before Christmas, I promised myself that one day I would make my own. Maybe when I finish unpacking. And I think I would marry Nigel Slater if I weren't married already and he were otherwise inclined. C.x

Such a zing in this post I can almost smell and taste all that lemony goodness. Thanks for sharing a lovely simple recipe (and cheap too :0)

I agree with C - Mr Slater's such a darling. Well I have a string of lemons left over from Christmas. They appear to be in perfect health so I will transform them tomorrow. Waste not want not.

I am a lemon curd junkie and LOVE making it when I have time too.....any sign of the package? I am back in the UK, so cannot check the posting slip, but hope it is with you now or very soon!

One of my favourites. I intend to follow your lemony example.

The florentines have gone, the quince jelly a quarter munched and the girls adore their mice. One of them sleeps with hers. Thankyou so much for your wonderful Christmas present xxx

Thank you for this New Year's inspiration. Your photos and words have encouraged me to try to prepare some delicious lemon curd of my own, rather than just looking at those premium labled jars in the shop and the prices and thinking...perhaps later.

That looks yummy although I've never tried lemon curd but it's also one of the things I'd like to try and make. On this month's issue of the ASDA magazine there's a recipe for an orange curd wich looks very good too. Definitely on my list of things to try soon.

Oh my goodness, I used to have lemon curd as a child and I don't think I've eaten it since. Alas it is too sugary for me these days, but I now have a very Proustian memory of its taste in my mind! Plus, I am a sucker for crossing things off lists. I've even written something I've just done onto my list for the pleasure of crossing it off immediately - how sad is that??

I knew someone who always began her list with get up so that there was something she could cross off straight away! I love lists and the crossing off of done things, so satisfying.
Love lemon curd these days though daren't make otherwise I'll just eat it. Have you tried it swirled through a lemon cake just before it goes in the oven? You get streaks of lemony soft bits, utterly delicious!
Didn't know that about NS, what a waste!!! Loved his last programme if only because he was using such lovely crockery & pottery about which I'm rather a fanatic!

Less sugar must only have heightened the lemony loveliness. I've made lemon curd a few times using Rose Levy Berenbaum's recipe from The Cake Bible. Such wonderful stuff - it elevates toast to dessert status.

Your list is wonderful - worthy goals all (and very attainable). Happy New Year!

Yes but the grated rind does add extra lemoniness...
