What-No-Bread?

The Real Thing...
When there is no bread in the house, I make What-No-Bread instead.

I put about a cup of self-raising flour in a bowl.


Then rub in fat (usually butter) until the mixture resembles breadcrumbs.


Next is the exciting part, adding flavourings. Some of my favourites are...
  • ground nutmeg, ground cinnamon & dried fruits (dates, sultanas, apricots, raisins)
  • black pepper, grated cheese, rosemary, chopped onions
  • sunflower seeds, pumpkins seeds, sesame seeds
  • citrus peel finely chopped
Give it a good mix then add milk until 'dough-like'.

Shape & bake (in a medium oven) for about 20 mins, or until brown. 


If you are able to wait until the What-No-Bread (basically scone mix) is cooled then you have more will power than I do!


I like to slather on extra butter & jam (Quince jelly this time- Thank you Sue!)

That looks delicious. I have never had quince jelly, I will have to rectify that error immediately! You are so good, when we are out of bread we crack open the ritz crackers!

Oh, that does look scrumptious! There is no way that I could wait until it was fully cool to sample such bread.

Please can you let me know how much milk and butter you add to the flour and then I'll make the bread. It will save a trip to the shops to make a loaf.

erm...sorry but I've no idea, I add the ingredients by sight & have never measured them. Rub butter & flour until breadcrumb texture(if too floury add more butter/if too fatty add more flour) Then I add milk mixing unitl doughlike (too wet add more flour/ too dry add more milk) Sorry not to be more helpful-experiment,each time it's slightly different but that adds interest!

Thanks for this - I will definitely try it. We have a bread machine and try to make all our own bread, however it takes four hours and somtimes there just isn't time.

I have printed this out for a 'what no bread' day. I am salivating at the thought of slapping on my gooseberry jam which is perfect with a scone type cake mix.

Wow! I am really going to try this; I make a lot of our bread - by hand, I can't be doing with bread-makers, though my other half used one regularly for several years. I definitely think it's a man thing.

I have been thinking that soda-bread is probably the quickest/easiest non-yeast bread, and it's only recently that I realised you can even get round the buttermilk problem - you really have to plan ahead for that don't you - by using ordinary milk and lemon juice or yoghurt. But this is even easier!

Problem is, I started a low carb diet a month ago! How about that for timing! Reduced to 1 slice of bread only per day. (Bu tit is working I can tell you! Where all else has failed.)

I saw this and started craving scones. Have never had success at regular scones, I make lemonade scones with cream and Lemonade.
